Pedro Subijana Akelarre 50.

The inner music of Pedro Subijana.

In 2024, Pedro Subijana marked 50 years at the helm of Akelarre, one of the temples of world gastronomy. Pedro is a global reference, honored with every distinction the world has to offer. His story sums up half a century of craft, innovation and commitment to an idea that transcended the kitchen: the New Basque Cuisine. A revolution born of a generation of soloists — Arzak, Argiñano, Castillo, Berasategui… — that needed a conductor to become a shared score. That conductor was Pedro Subijana: the chef who harmonized talents, who turned the profession into a collective calling, and who gave a soundtrack to the story of a land.

We wanted to celebrate not just 50 years of a restaurant, but 50 years of a way of thinking, creating and teaching. We turned Subijana’s role into an icon: the conductor of the New Basque Cuisine — someone able to listen to every voice, every instrument, and compose a shared harmony from all of them. To do it, we started with his own voice. We interviewed him to distill six major themes that define his philosophy: space, design, product, tradition, innovation and experience. But we didn’t want to stop at his words. We wanted to hear what Pedro Subijana sounds like on the inside.

Six themes, one harmony.

We turned Pedro’s words into music. We commissioned Basque composer Koldo Uriarte, a Feroz Award winner and Goya nominee, to compose six original pieces inspired by each of those concepts. He wasn’t meant to set his voice to music, but his thinking. Every note, every chord translated his way of understanding gastronomy: doubt as a virtue, innovation as humility, space as a tool for freedom. The result was an audiovisual project where word, music and image merge to offer something unprecedented: hearing what Akelarre sounds like inside its creator’s head.

The piece premiered at San Sebastián Gastronomika, the industry’s most important congress, where the audience got a glimpse into Subijana’s inner universe in his most special talk. The one that summed up his “first” 50 years. And so, after half a century of work, we could hear his story the way it truly sounds — not in his voice, but in his head. The project became a choral celebration of Basque culinary thinking, a tribute to craft, to teaching, and to the inner music that moves those who cook to teach, share and transcend.
